Half Cos Salad
THYME | PARSLEY
INGREDIENTS
¼ cup tahini
juice of 2-3 small lemons
1/2 tsp pink Himalayan salt
at least 1/2 cup water, to thin
¼ tsp turmeric powder
4 tomato’s
100ml olive oil
salt
pepper
2 baby cos salads, cut in half
2 hard-boiled eggs
50g parmesan cheese
freshly picked parsley
1 avocado
METHOD
Step one. To make lemon tahini dressing place tahini, lemon, salt and water in a bowl or blender and blend until smooth, season with salt, pepper and turmeric powder.
Step two. Using a box grater, grate your tomatoes into a bowl, add olive oil season with salt and a generous amount of pepper.
