Attitude filled Half Cos Salad with a delicious turmeric/tahini deressing.

Vibrant parsley and fresh Half Cos, layered with salsa and dressed with our tahini dressing for the perfect dish. Colourful, bright, nutrient-dense and packed with flavour.

INGREDIENTS


¼ cup tahini

  • juice of 2-3 small lemons

  • 1/2 tsp pink Himalayan salt

  • at least 1/2 cup water, to thin

  • ¼ tsp turmeric powder

  • 4 tomato’s

  • 100ml olive oil

  • salt

  • pepper

  • 2 baby cos salads, cut in half

  • 2 hard-boiled eggs

  • 50g parmesan cheese

  • freshly picked parsley

  • 1 avocado

 

METHOD


  • Step one. To make lemon tahini dressing place tahini, lemon, salt and water in a bowl or blender and blend until smooth, season with salt, pepper and turmeric powder.

  • Step two. Using a box grater, grate your tomatoes into a bowl, add olive oil season with salt and a generous amount of pepper.
