The Italian Green Sauce

The Italian green sauce can be relied on to add zing to almost any dish and is infinitely tweakable – just don’t hold back on the anchovies.

 
 
 

INGREDIENTS


  • 1 shallot diced

  • 1 potted parsley

  • 15 chopped mint leaves

  • 12 chopped basil leaves

  • 1 tbs capers

  • 1 tbs dijon mustard

  • 150 E.V.O extra virgin olive oil

  • 6 anchovy fillets

  • 1 garlic

 

METHOD


  • Step one. Simply mix all chopped ingredients into a bowl together and season with salt and pepper.

  • Step two. Store in a container in the fridge, cap with oil if needed.
