INGREDIENTS


  • 200g salmon, cleaned

  • 1 chili, minced

  • 1 cm ginger, minced

  • 1 bunch coriander

  • 2 tbsp diced red onion

  • 4 limes

  • 2 finger limes

  • 2 avocado, diced

  • 2 mango’s, diced

  • 1 heads red oak lettuce

 

METHOD


  • Step one. Dice your salmon ½ cm thick then place in a mixing bowl.

  • Step two. In the same mixing bowl with the salmon add minced ginger, minced chilli, chopped coriander, diced red onion, finger limes and the juice and rind of four limes. Season with Salt and pepper and gently mix, making sure everything’s combined evenly.

  • Step three. Let your salmon mix marinate and sit for 20 minutes to cure and cook, then add sliced avocado and mango.

  • Step four. Separate your Red Oak lettuce into intact lettuce cups.

  • Step five. Fill each lettuce cup in one tablespoon of salmon mix, garnish with some fresh herbs and finger limes.
