Layered Salad
THYME | BASIL | BABY COS
INGREDIENTS
3 tbsp lemon juice
250 ml olive oil
¼ tsp thyme leaves
2 baby cos, cut into ¼
1 pear, sliced fine
100g shaved parmesan, cheese
100g prosciutto
1 bunch basil
150g halloumi
3 eggs, hard-boiled
METHOD
Step one. In a glass jar or mixing bowl mix together lemon, olive oil, thyme, salt and pepper.
Step two. Gently separate the baby cos and alternately stuff sliced pear, parmesan, prosciutto and basil in between lettuce layers.
Step three. Dress with lemon dressing then using a grater, grate halloumi and egg over the salad.
